Pasto (or syglino/syglino) is a recipe for tenderizing pork, which is found throughout the southern Peloponnese and is traditionally thought to have originated in Mani region. The pieces of meat or sausages are first marinated in salt, then smoked with selected woods and herbs and slowly cooked with pork fat (glina), various spices and herbs.
The recipe we use is the same as the one Anastassi Memmos’s mother-in-law, Aphrodite, had created 4 decades ago. Pasto is available in a 500 gram package, which usually contains a piece of pork along with a piece of sausage.
